Salary structure to motivate detail service workers

I am the new owner of a self service car wash (5 self service, and 1 touchless auto bay). Previous owner started a hand wash/detail service on site and it seems to do really well. The issue is that their is no accountability for cash flow. There is no point of sale automation, just cash and a square for cards. I want to set up a better process and offer the detail "manager" a salary structure to motivate him to be professional, honest, and customer oriented. As of now he gets a monthly rate, but I think a blend of salary and bonus for number of cars or exceeding a number of cars. Possibly only an amount per car to motivate him to get more customers. Does anyone have a system that works? I also was thinking of initiating a 48 hour rain warranty so that every customer gets a receipt and I can track number of cars. Thanks in advance.

One idea is an hourly wage plus a sales incentive. For example; $15/hr base pay. Then 3% of gross up to $2999 Once you hit $3000,it jumps to 5%.
