Don't forget,they make a special teflon type tape for use with Stainless fittings. I learned this the hard way, when I couldn't get two fittings apart due to galling.

Fastenal has the stuff. It's a little pricey, but it keeps the SS fittings removable.

Can I use galvanized strut channel and the vibration reducing tubing clamps or should that also be stainless?

No need for stainless strut.

There is also fiberglass strut available, but don't use it for anything longer than 1-2 feet as it can bow on you. Also in addition to special teflon tape, you could use never sieze as an alternative to reduce galling.
